Ingredients

  • 150 g of “00” soft wheat flour = 1 cup

  • 50 g durum wheat flour = a little less than ½ cup (.39 c)

  • 2 eggs of at least 70 g (2,5 oz) each (1 egg every 100 g of flour)

FOR THE FIRST FILLING

  • 3 teaspoons of Parmesan cheese

  • 1/4 tsp salt

  • Pepper 

  • 250 g ricotta cheese = 1 cup

  • 2 (use 1/4 cup)cups Boiled and squeezed spinach  cut up very fine

FOR THE SECOND FILLING

  • Zest of half lemon (bio)

  • Salt and pepper​

  • 250 g ricotta cheese = 1 cup

  • 3 teaspoon parmisan cheese

Servings for: 4/5 people

Preparation

HOW TO PREPARE HOME MADE RAVIOLI

Mix all the ingredients in a bowl make.

Make the dough and divide into equal parts and roll out one at a time; make strips 1/2 mm thick and about 10 cm in width Place 2 strips of dough on a work surface, then put on one of them some small doses of filling (the size of a walnut)  It’s very important that the doses are spaced apart.

Brush with some water the edges to seal and finally cover with the other strip of dough.

HOW TO PREPARE HOME MADE TORTELLACCI

Mix all the ingredients in a bowl make the dough as for the ravioli, place the strips of dough on a work surface and with a round cookie cutter make the circles and put on all of them some small dose of filling then close it as shown on the video.
